Veggie Broth with Miso + Coconut Milk Soup

Ingredients:

  • ¼ C Kroma Veggie Broth with Miso 
  • 6oz Unsweetened coconut milk
  • ¼ C Tofu (drained + cut into small pieces)
  • ½ Ginger, peeled + diced
  • ¼ C Mushrooms, chopped
  • 1 Lime, juice
  • 3-5 Jalapenos, sliced
  • Cilantro, handful

Directions:

  • Bring 10oz of water to a boil, reduce to medium heat and add:
  • Kroma Veggie Broth with Miso
  • Ginger
  • Add in + cook for 3 minutes:
  • Unsweetened coconut milk
  • Mushrooms 
  • Tofu
  • Bring to a simmer + cook for 1 minute:
  • Lime juice 
  • Jalapeños 
  • Cilantro
